Cherry Almond Clafouti

I found this great recipe on The Seasonal Gourmet. I was excited to try it after I was given a bag of fresh hand picked and pitted cherries from my SIL's grandmother. It turned out wonderful!



*Original recipe serves 4, I doubled it
Makes 8 servings
  • 2 cups of half-and-half 
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 4 eggs
  • 1 cup flour
  • 6 Tablespoons sugar
  • Pinch of salt
  • 16 oz. pitted sweet cherries (equals about 3 cups of cherries)
  • 1/2 cup sliced almonds
  •  Vanilla sugar
  1. Preheat oven to 350.
  2. In a medium sauce pan, add 1/2 and 1/2, vanilla extract and almond extract.  Stir to combine and bring to a gentle simmer, making sure not to boil the mixture.  Remove.
  3. In a small bowl add eggs, flour, sugar and salt. Mix everything together until a smooth paste.  Add egg mixture to the warm milk.  Stir to combine well.
  4. Grease a small baking dish (I used a deep dish pie plate) and pour in the batter.  Drop in the cherries and top with almond slices. Sprinkle on vanilla sugar.
  5. Bake clafouti for 45 minutes or until the top is lightly golden brown.
