Cherry Almond Clafouti
I found this great recipe on The Seasonal Gourmet. I was excited to try it after I was given a bag of fresh hand picked and pitted cherries from my SIL's grandmother. It turned out wonderful!

- 2 cups of half-and-half
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 4 eggs
- 1 cup flour
- 6 Tablespoons sugar
- Pinch of salt
- 16 oz. pitted sweet cherries (equals about 3 cups of cherries)
- 1/2 cup sliced almonds
- Vanilla sugar
- Preheat oven to 350.
- In a medium sauce pan, add 1/2 and 1/2, vanilla extract and almond extract. Stir to combine and bring to a gentle simmer, making sure not to boil the mixture. Remove.
- In a small bowl add eggs, flour, sugar and salt. Mix everything together until a smooth paste. Add egg mixture to the warm milk. Stir to combine well.
- Grease a small baking dish (I used a deep dish pie plate) and pour in the batter. Drop in the cherries and top with almond slices. Sprinkle on vanilla sugar.
- Bake clafouti for 45 minutes or until the top is lightly golden brown.
