This looks soooooooooooooooo good. I think this will be my Saturday experiment! Lets see if I can give Starbucks a run for it's money!
Mocha Coconut Frappuccino
Makes 2 servings
Ingredients:
½ cup shredded coconut
¾ cup strong coffee (chilled)
1 cup low fat milk
1/3 cup Hersheys chocolate syrup
3 tablespoons sugar
2 cups ice
Whipped cream for garnish
To make:
Preheat oven to 300 degrees. Spread shredded coconut on a baking sheet and toast coconut in the oven. Stir the coconut around every 10 minutes or so for even browning. After 15-20 minutes remove and cool. Combine the cold coffee, milk, 1/3 cup of the coconut, the chocolate syrup, and sugar in a blender. Blend for 15 – 20 seconds to dissolve sugar. Add ice and blend until ice is crushed. Pour into 2 glasses. Garnish with whipped cream, a drizzle of chocolate syrup and the remaining coconut.
